"This recipe is so simple and takes hardly any time at all. An easy go to dish that is nice when served with salad, quinoa, rice, or any veggies. If you need a quick and yummy salmon dinner/lunch, try this out. It would be nice served in a pita pocket with lettuce, tomato, etc as well. If you use plain bread crumbs, mix in a handful of fresh chopped parsley."

ingredients

  • 12 ounces skinless boneless salmon (sold in 6 oz cans or packets)
  • 12 medium onion, chopped
  • 12 cup breadcrumbs, seasoned or 1/2 cup breadcrumbs, plain
  • 14 cup chopped parsley (optional)
  • 2 eggs, beaten
  • 2 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • salt
  • pepper

  • Saute onions in 1 TBS olive oil until cooked through but not brown.
  • Drain liquid from the salmon.
  • Combine salmon, sauteed onion, breadcrumbs (parsley if you use plain breadcrumbs), eggs, salt, and pepper.
  • Form mixture into patties.
  • Melt butter and oil in a pan.
  • Brown salmon patties on both sides (about 4-5 minutes per side).
  • Place cooked patties on a paper towl to absorb excess oil.

  1. Im a younger cook (14) which might be why i dont get this part (Saute onions in 1 TBS olive oil until cooked through but not brown.) Its a bit confusing if anyone can spare the time and explain this it will be much appreciated! ??

  1. These are nice and tender. I have made salmon patties many times over and don't believe I have precooked the onions before. The full recipe made 4 nice servings. They were served with fresh green beans and roasted poatotes.

  2. I think that you are making a simple recipe hard . I take 2 cans of pink salmon drained and combine it with 2 eggs and about 25 saltines crushed . Then form parties and I fry it in peanut oil until nicely browned . People tell me that they are the best they ever had .

  5. Based upon comment from previous reviewer, used Ritz crackers instead of bread crumbs. Actually used Roasted Vegetable Ritz and did not add onions per recipe. Very good. Declared a keeper of recipe by family. Thanks!

  2. I added red/green bell peppers for awesome crunch and used crushed rice crispies (i was trying to use up) instead of bread crumbs. We actually liked the rice crispy flavor better than the usual bread crumbs and the outside of the cake crisped up better.

  3. Good recipe! Simple & tasty for a quick weeknight dinner. I ground up some quick oats in place of the bread crumbs. I split the recipe in half, adding a dash of Italian herbs and onion to one half and fried them up. The plain half I baked up into dog treats. (Both halves got the parsley, egg, and oat flour.)

  4. Added 2 tablespoons of mustard and froze the patties for one hour before cooking. Increase cooking time to about 7-8 minutes in a pan per side on medium heat.

  5. Made it just like the recipe except used coconut oil instead of olive oil. I thought it was really good. Loved these as a kid. I'm going to try the Ritz crackers for bread crumbs next time as others have done...
